This is a great recipe for all the mom’s out there who need a good healthy wholesome alternative to frozen store-bought chicken nuggets. It’s not only a great meal for kids, but also for the whole family!
Ingredients:
- 1 lb chicken breast (sliced into strips)
- 2 Tbsp avocado oil
- 1/2 cup oats (quick)
- 1 Tbsp Italian seasoning
- 1/2 tsp sea salt
- 6 Carrots (peeled and sliced into fries)
- 1/4 cup Dijon mustard
- 3 Tbsp raw honey

- Preheat your oven to 400.
- Line 2 baking sheets with parchment paper.
- Brush chicken strips with some avocado oil (I use the avo oil spray to make this easier)
- Combine oats, Italian seasoning, + sea salt and spread over a small plate.
- Press both sides of chicken strips into the mixture and then lay on a baking sheet.
- Toss the carrots in the avocado oil and sprinkle with sea salt. Spread on a baking sheet.
*Note: You can also use sweet potatoes instead of carrots.
- Put pans in the oven for 30 mins, flipping chicken and carrots halfway through.
- 5 minutes out, combine your dijon and honey to make the dipping sauce.
Makes: ~ 3-4 servings
Notes:
If you don’t have quick oats on hand, you can put some rolled oats in a blender or food processor and pulse for a quick minute.
